As much as bitter gourd vegetable is beneficial for health, on the other hand everyone wants to avoid preparing it. The reason is that it tastes bitter. But today in this blog I am going to tell you such a secret mother’s recipe that once you prepare the vegetable, you will feel like preparing it again and again. And if the children also eat this vegetable, they will demand bitter gourd vegetable again and again.
Ingredients for making bitter gourd vegetable.
Raw bitter gourd, (avoid ripe bitter gourd with seeds) – 500 grams
Onion – 3 piece
green Chilli – 1 small
Tomato – 1 small
Oil – one big spoon
Cumin seeds – half a spoon
Mustard seeds – less than half a spoon
Fennel seeds – one teaspoon
Turmeric – half a spoon
Salt – according to taste / half a spoon
Red Chilli – half a teaspoon
Coriander powder – one teaspoon
Asafoetida – a pinch
Ginger garlic paste – half a teaspoon (As upon you, I don’t use this)
Cutting bitter gourd and onion.

Step-1 First of all take bitter gourd and check if it is dry, then cut it into small pieces some long and some round, remember not to remove the outer skin. When it is completely cut, keep it in a bowl, add half spoon turmeric and salt, mix it well and cover it and keep it for about 45 minutes.
After 45 minutes squeeze it well so that all the water comes out.
Step-2 Take onion in hand and cut it into long pieces.
Step-3 Grate tomato.
Step-4 Cut chilli into small pieces.
Fry in oil till it is cooked.
Heat one spoon oil in a pan, when it gets hot, stir the squeezed bitter gourd in it till it becomes soft. Then take them out in a plate using a sieve. Now add chopped onion in the same oil and fry half of it raw (take care not to let the onion burn). Keep it in a separate plate.
Cook well with spices.
Now add cumin seeds, mustard seeds, asafoetida, fennel seeds, ginger garlic paste (as per your liking) in the same hot oil one by one. Now add fried bitter gourd, onion and add chopped chilli on top. Mix it a little and add chilli, coriander and salt as mentioned above.
Lastly add tomatoes (if you want you can add dry mango powder). Now cook on low flame for about 3 to 5 minutes. Now you can serve it hot.
Things to keep in mind while making bitter gourd vegetable.
Do not cut bitter gourd too finely, keep it a little thick while cutting. Soak it in turmeric and salt and then squeeze it well.
Lightly fry/cook the onion
Add tomatoes/amchur at the end.
Do not add too much chilli masala.
