Eating roasted chickpeas is a healthy habit because it contains sufficient amount of protein. Along with this, there are many health benefits as well. It is very easy to prepare the roasted chickpea curry, you can easily prepare it at home and get the health benefits.
Ingredients for Roasted Chickpeas vegetables.
Whole overnight soaked chickpeas – one medium size bowl
Chickpeas Garam Masala – 1 teaspoon
Boiled and peeled tomatoes – 3
Boiled onions – 2
Green chilli – 1
Red chilli – half teaspoon or as per your taste
Coriander powder – one teaspoon
Turmeric powder – half teaspoon
Garlic ginger paste – one teaspoon
Cloves, black pepper, bay leaves – as per your taste
Coriander leaves – as per your taste
Salt – as per taste
Red dry chilli – 3 sprigs
Asafoetida – one pinch
Raw onion – 1
Cumin seeds – one teaspoon
Method of Roasted Chickpeas preparation.

First of all, cook the overnight soaked chickpeas in a pressure cooker till 4 whistles. Then filter it and separate it and roast it on a pan and keep it aside.
Now make a paste of boiled tomatoes, onion and matcha. Chop a raw onion into fine long pieces and keep it aside.
Now put oil in a pan and add bay leaf, cumin seeds, asafoetida, cloves, black pepper and fry the raw onion. Add all the spices one by one and then add the prepared paste to it and cook for about 4 minutes.
Now add roasted chickpeas to it and cook till it breaks easily.
After it is cooked well, add chola masala, green coriander to it and apply the tadka of red chilli on top and serve.
Method of serving.
It can be served with rice, roti, puri or bhatura. The taste of roasted chola is very good, definitely try it once.
Things to keep in mind.
Soak the chole properly overnight.
Cook it well.
While roasting, take care that the chole do not burn.
Keep the flame low while cooking.
Do not heat the oil too much at once.
If you want to make it more tasty then you can add different types of vegetables to it.
